Description of the chapter - Food traceability is the ability of concerned entities to monitor, track, and document the movement of food products ,their ingredients, processing conditions, handling, and storage throughout the supply chain. In the context of foodstuff, traceability can be regarded as the ability to trace and track food throughout the various stages of the supply chain. Food traceability is often linked with the management of logistics and is considered the ability to access information through timely reported identifications across logistics. Indeed, some authors argued that better traceability is directly linked with an increased flow of information among supply chain intermediaries and is subject to the performance of the intermediaries in managing specified responsibilities. In this chaper, the role of RFID and blockchain technologies in food traceability in the upcoming Industry 4.0 is introduced and analyzed extensively, highlighting their potentialities and the issues to be still overcome.
