In this paper the most recent works in Electronic tongues (ET, e-tongue) devices used in the food industry are oreviewed. The working principle of ET and the main type of sensors applied are described. Focus is placed on the e-tongue applications within solid food products quality monitoring. Particular attention is given to sample pretreatment often required prior to ET analysis. Further, a critical outlook on the employment of Electronic tongue devices for foodstuffs’ authenticity and adulterations assessment, and for monitoring of production processes is presented.
